Garlic Balsamic Steak Bites

Delicious bite-sized steak marinated in garlic and balsamic vinegar, served with roasted baby gold potatoes and fresh green beans.

Ingredients
  

For the Steak Marinade
  • 2 lb lean steak (trimmed & cubed into 1-inch pieces)
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • ¼ tsp crushed red pepper (optional)
  • 3 cloves garlic (minced)
  • 2 tbsp balsamic vinegar
  • 2 tbsp low-sodium beef broth
  • 1 tsp honey
  • 1 tbsp soy sauce
For the Vegetables
  • 1.5 lb baby gold potatoes (quartered)
  • ½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • 1 tsp paprika
  • 12 oz fresh green beans (trimmed)
  • ½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder

Method
 

Marinating the Steak
  1. In a bowl, mix the olive oil, soy sauce, balsamic vinegar, salt, black pepper, garlic powder, and crushed red pepper. Add the cubed steak, coat well, and let it marinate for at least 30 minutes.
Preparing the Vegetables
  1. Preheat your oven to 400°F (200°C).
  2. In another bowl, combine the quartered baby gold potatoes with olive oil, salt, black pepper, garlic powder, and paprika. Spread them out on a baking sheet and roast for 25-30 minutes until golden and crispy.
  3. After 10 minutes, add the trimmed green beans tossed in olive oil, salt, black pepper, and garlic powder to the same baking sheet.
Searing the Steak
  1. In a skillet, heat a little olive oil over medium-high heat. Sear the marinated steak bites in batches until browned on the outside and cooked to your liking. Remove from heat.
Making the Glaze
  1. In the same skillet, add minced garlic, balsamic vinegar, beef broth, honey, and soy sauce. Stir and let it simmer for a few minutes until slightly thickened.
Assembling the Dish
  1. Serve the steak bites over the roasted potatoes and green beans. Drizzle the glaze on top. Enjoy your delicious meal!

Notes

Cut the steak into even pieces to ensure they cook evenly. Let the steak marinate longer for a more intense flavor. Adjust the red pepper flakes for more or less heat, depending on your taste. You can add your favorite vegetables to the roasting process for variety.
