Garlic Butter Lobster Bites with Fresh Dill

Ingredients
  

  • 1 1/2 lb cooked lobster meat, cut into large chunks
  • 1/2 cup unsalted butter
  • 5 cloves garlic, finely minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1/4 tsp freshly cracked black pepper
  • 1/4 tsp red pepper flakes, optional
  • Salt, to taste

Method
 

  1. Cut the cooked lobster into generous bite-sized pieces, keeping plenty of the claw and tail meat in large chunks.
  2. Melt the butter with the olive oil in a wide skillet over medium-low heat. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to brown it.
  3. Add the lobster chunks to the skillet and gently toss them in the garlic butter. Cook for 2 to 3 minutes, just until the lobster is warmed through.
  4. Stir in the fresh lemon juice, lemon zest, black pepper, red pepper flakes if using, and a small amount of salt.
  5. Add the fresh dill and parsley. Gently toss the lobster again so the herbs and garlic butter coat every piece while keeping those beautiful lobster chunks intact.
  6. Spoon the warm garlic lemon butter from the skillet over the lobster several times until every bite is glossy and flavorful.
  7. Transfer the garlic butter lobster bites to a shallow serving dish and spoon the remaining herb butter over the top. Serve hot with crusty bread for soaking up the garlic butter sauce.

Notes

Keep the lobster in generous chunks so the finished dish has plenty of texture.
Cook the garlic gently over medium-low heat and do not let it brown.
Warm the cooked lobster only briefly so it stays tender.
Add the lemon juice and zest near the end for a bright, fresh flavor.
Fold in the dill and parsley gently so the lobster pieces remain intact.
Add salt cautiously because cooked lobster can already be naturally salty.
Serve hot with crusty bread for soaking up the garlic herb butter.
