Ingredients

  • 1 1/2 lb large shrimp, peeled, deveined, tails removed
  • 4 ears fresh corn, cut into halves or thirds
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 5 cloves garlic, minced
  • 1 tsp Old Bay seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp Cajun seasoning
  • 1/2 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

Equipment

  • large pot For boiling the corn
  • Colander For draining the corn
  • large skillet For searing the shrimp and finishing the dish
  • Tongs or silicone spatula
  • Paper towels For drying the shrimp before seasoning

Method

  1. Bring a large pot of salted water to a boil. Add the corn and cook for 5 to 6 minutes, until tender. Drain and set aside.
  2. Pat the shrimp dry with paper towels. Season with Old Bay, smoked paprika, Cajun seasoning, salt, and black pepper.
  3. Heat the olive oil and 2 tbsp butter in a large skillet over medium high heat. Add the shrimp in a single layer and cook for 1 to 2 minutes per side, until pink, lightly golden, and cooked through. Work in batches if needed so the shrimp sear instead of steaming.
  4. Reduce the heat to medium low. Add the remaining 2 tbsp butter, minced garlic, Italian seasoning, and lemon juice. Stir for about 30 seconds, just until the garlic is fragrant.
  5. Return all the shrimp to the skillet if cooked in batches. Add the cooked corn and gently toss everything in the garlic butter until the shrimp and corn are well coated and warmed through.
  6. Sprinkle the garlic butter shrimp and sweet corn with fresh parsley and serve immediately with lemon wedges. Serve with rice or crusty bread for a buttery seafood recipe packed with sweet corn and garlic shrimp flavor.
