- Preheat the oven to 400°F. Lightly grease a baking dish.
- Pat the shrimp dry with paper towels. Season with paprika, salt, and black pepper.
- Lay each cheese slice flat. Place 2 to 3 shrimp on one end, then roll tightly around the shrimp and secure with a toothpick.
- Place the garlic Parmesan shrimp roll-ups seam side down in the prepared baking dish.
- In a small bowl, mix the melted butter, garlic, Italian seasoning, Parmesan, parsley, and lemon juice.
- Spoon the garlic Parmesan butter evenly over each shrimp roll-up, making sure the shrimp and cheese are well coated.
- Bake for 12 to 15 minutes, until the shrimp are pink and fully cooked and the cheese is melted and bubbly.
- Broil for 1 to 2 minutes, watching closely, until the tops are lightly golden.
- Let the shrimp roll-ups cool for 3 minutes before serving. Remove the toothpicks and serve hot.
Notes
Pat the shrimp very dry before seasoning to prevent excess moisture from making the cheese soggy.
Roll the cheese tightly around the shrimp and secure each roll-up with a toothpick.
Place the roll-ups seam side down to help keep them closed while baking.
Watch the roll-ups closely under the broiler because the cheese can brown quickly.
Frozen shrimp may be used after thawing completely and patting very dry.
Swiss or mild white cheddar may be substituted for provolone or mozzarella.
The roll-ups may be assembled and refrigerated unbaked for a few hours before cooking.
Remove all toothpicks before serving.
