- Cook the lo mein noodles according to the package directions until al dente. Drain well and set aside.
- Toss the steak with the soy sauce, cornstarch, and black pepper until evenly coated.
- Whisk together the soy sauce, oyster sauce, hoisin sauce, brown sugar, sesame oil, water, and cornstarch until smooth.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Cook the steak for 60 to 90 seconds per side, until nicely browned. Transfer to a plate.
- Add another tablespoon of oil and cook the shrimp for 60 to 90 seconds on one side and 30 to 60 seconds on the other, until almost cooked through. Remove from the skillet.
- Add the remaining oil, then cook the bell pepper for 2 minutes. Stir in the garlic, ginger, and half of the green onions for 30 seconds, until fragrant.
- Whisk the sauce again, pour it into the skillet, and cook for 1 to 2 minutes, until glossy and slightly thickened.
- Add the cooked noodles, spinach, and steak. Toss until everything is evenly coated and the spinach begins to wilt.
- Return the shrimp to the skillet and cook for another 30 to 60 seconds, until tender and fully cooked. Garnish with the remaining green onions and sesame seeds, if desired.
Notes
Cook the noodles only until al dente so they do not become soft when tossed with the sauce.
Pat the shrimp dry before cooking to help them sear instead of steam.
Cut the steak into evenly sized pieces so it cooks at the same rate.
Cook the steak and shrimp in batches to avoid overcrowding the skillet.
Whisk the sauce again immediately before adding it because the cornstarch may settle.
Return the shrimp only at the end so it finishes cooking without becoming tough.
Taste before adding extra salt because the soy sauce, oyster sauce, and hoisin sauce already contain sodium.
