Preparation
- Preheat your oven to 350°F (175°C).
- In a food processor, combine the pitted dates, oats, toasted coconut, almond butter, vanilla extract, and salt.
- Process until everything is well mixed and sticky, scraping down the sides as needed.
- Line an 8 x 8 inch baking dish with parchment paper.
- Press the mixture firmly into the bottom of the dish using your hands or a spatula.
- Bake for about 20-25 minutes or until the edges start to turn golden brown.
- Remove from the oven and allow to cool completely before cutting into bars.
Notes
Store your date bars in an airtight container at room temperature for up to a week. Refrigerate for up to two weeks or freeze for three months, separating bars with parchment paper.
