  • 2 cups pitted dates Make sure the dates are fresh and moist.
  • 1 cup gluten-free oats
  • 1 cup shredded toasted coconut
  • 1/2 cup almond butter Or any nut butter of your choice.
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine the pitted dates, oats, toasted coconut, almond butter, vanilla extract, and salt.
  3. Process until everything is well mixed and sticky, scraping down the sides as needed.
  4. Line an 8 x 8 inch baking dish with parchment paper.
  5. Press the mixture firmly into the bottom of the dish using your hands or a spatula.
  6. Bake for about 20-25 minutes or until the edges start to turn golden brown.
  7. Remove from the oven and allow to cool completely before cutting into bars.

Notes

Store your date bars in an airtight container at room temperature for up to a week. Refrigerate for up to two weeks or freeze for three months, separating bars with parchment paper.
