Golden Cod with Shrimp and Mushrooms in Garlic Sauce

Ingredients
  

  • 4 cod fillets, desalted and well dried
  • 250 g raw shrimp, peeled
  • 200 g fresh mushrooms, sliced
  • 5 to 6 cloves garlic, finely sliced
  • 4 tbsp extra virgin olive oil
  • ½ tsp sweet paprika
  • ¼ tsp dried chili flakes, optional
  • ½ cup fish broth or water
  • ½ lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped, for garnish

Method
 

  1. Pat the cod fillets and shrimp dry. Season the cod with black pepper and a little salt if needed.
  2. Heat 2 tbsp olive oil in a large skillet over medium high heat. Add the cod and cook for 3 to 4 minutes per side, depending on thickness, until golden and cooked through. Remove carefully and set aside.
  3. Add 1 tbsp olive oil to the same skillet. Season the shrimp with sweet paprika, black pepper, and salt to taste. Cook for 1 to 2 minutes per side until pink and opaque. Remove and set aside.
  4. Add the remaining 1 tbsp olive oil and the sliced mushrooms. Cook for 4 to 5 minutes until softened and golden.
  5. Lower the heat and add the sliced garlic and optional chili flakes. Cook for about 30 seconds until fragrant. Pour in the fish broth or water and lemon juice, scraping up the flavorful bits from the skillet. Simmer for 2 to 3 minutes.
  6. Return the cod and shrimp to the skillet. Spoon the garlic sauce and mushrooms over the seafood and warm gently for 1 to 2 minutes.
  7. Sprinkle with fresh parsley and serve the golden cod and shrimp hot, with the garlic mushroom sauce spooned over the top.

Notes

Pat the cod and shrimp dry before cooking. Season the cod with a little salt only if needed, especially if using desalted cod. Cook the seafood gently when returning it to the skillet to avoid overcooking.
