  • 2 cans Canned tuna Well-drained
  • 1 large Egg
  • 1/4 cup Parmesan cheese Grated
  • 2 tablespoons Green onion Chopped
  • 1/4 cup Almond flour Can substitute with gluten-free breadcrumbs
  • 2 tablespoons Lemon juice
  • 1/2 teaspoon Paprika
  • 1 teaspoon Mustard
  • 2 tablespoons Olive oil For frying
For Serving
  • 2 cups Fresh arugula
  • 1/2 cup Yogurt
  • 2 tablespoons Dill Chopped

Method
 

Preparation
  1. In a bowl, combine canned tuna, egg, Parmesan cheese, chopped green onion, almond flour, lemon juice, paprika, and mustard. Mix until well combined.
  2. Shape the mixture into six patties.
Cooking
  1. Heat olive oil in a pan over medium heat.
  2. Fry the patties until golden brown on both sides, about 3-4 minutes per side.
Make the Sauce
  1. For the creamy sauce, mix yogurt with chopped dill and additional lemon juice to taste.
Serving
  1. Serve the tuna patties over fresh arugula and drizzle with the creamy lemon and dill sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Uncooked patties can be frozen for longer storage.
