Marinating the Chicken
- In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
Grilling the Chicken
- Preheat the grill to medium-high heat.

- Remove and let rest, then slice.
Assembling the Bowls
- In serving bowls, layer cooked rice or quinoa, marinated chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- Drizzle with tzatziki sauce before serving.

Notes
You can add more vegetables like bell peppers or spinach for extra flavor and nutrients. If you prefer a smoky flavor, you can add some smoked paprika to the marinade. Letting the chicken marinate longer, up to 2 hours, will enhance the flavor even more.
