Ingredients
  

For the marinade
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
For the bowl
  • 1 pound chicken breasts Lean protein
  • 2 cups cooked rice or quinoa Your choice of grain
  • 1 cup cherry tomatoes, halved Fresh and juicy
  • 1 red onion thinly sliced
  • 1 cup feta cheese, crumbled For creaminess
  • 1/2 cup kalamata olives, pitted Adds a salty flavor
  • Tzatziki sauce for serving For drizzling

Method
 

Marinating the Chicken
  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
Grilling the Chicken
  1. Preheat the grill to medium-high heat.
  2. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  3. Remove and let rest, then slice.
Assembling the Bowls
  1. In serving bowls, layer cooked rice or quinoa, marinated chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  2. Drizzle with tzatziki sauce before serving.

Notes

You can add more vegetables like bell peppers or spinach for extra flavor and nutrients. If you prefer a smoky flavor, you can add some smoked paprika to the marinade. Letting the chicken marinate longer, up to 2 hours, will enhance the flavor even more.
