Ingredients
  

For the Batter
  • 1 ¼ cups thick Greek yogurt (divided) Use thick Greek yogurt for the best texture.
  • ½ cup maple syrup Can adjust for sweetness.
  • cup crunchy peanut butter Can swap with almond butter for variation.
  • 1 cup oat flour May substitute with all-purpose or almond flour.
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup cocoa powder
  • ¼ cup dark chocolate (chopped) Reserve some for topping.

Method
 

Preparation
  1. Preheat the oven to 350°F (or 320°F for a fan oven). Prepare an 8-inch square baking dish by lining it with parchment paper.
  2. In a medium bowl, combine 1 cup of Greek yogurt with the maple syrup and peanut butter.
  3. Sift in the oat flour and baking powder, mixing until you have a thick batter. Add salt and mix it well.
  4. Divide the batter: take 2/3 of it and add cocoa powder along with the remaining ¼ cup of Greek yogurt. If it’s too thick, add a splash of milk.
  5. In the remaining 1/3 of the batter, fold in the chopped chocolate, keeping some aside for topping.
  6. Spread the cocoa batter evenly in the baking dish. Then top with the lighter batter, smoothing it out.
  7. Use a knife to create a marbled effect, then sprinkle the reserved chocolate on top.
Baking
  1. Bake for 30 minutes. Allow the brownies to cool in the baking dish before slicing them into squares.

Notes

These brownies can be served warm or at room temperature. For an extra touch, enjoy them with a scoop of vanilla ice cream or whipped cream.
