Ingredients

  • 1 cup quinoa Rinse under cold water before cooking.
  • 2 cups water For cooking the quinoa.
Proteins
  • 2 pieces chicken breasts, cooked and diced Alternatively, use chickpeas or tofu for vegetarian option.
Vegetables
  • 1 cup roasted vegetables (e.g., bell peppers, zucchini, broccoli) Season with salt and pepper before roasting.
  • 1 cup mixed greens Any combination of fresh greens can be used.
Dressing
  • 1/2 cup creamy dressing (e.g., green goddess dressing) Use any creamy dressing preference.
Seasoning

Method
 

Preparing the Quinoa
  1. Rinse quinoa under cold water.
  2. In a saucepan, bring water to a boil, add quinoa, and reduce to a simmer.
  3. Cover and cook for about 15 minutes, or until the water is absorbed.
Roasting the Vegetables
  1. In a separate pan, roast vegetables in the oven at 400°F (200°C) for about 20 minutes.
  2. Season the vegetables with salt and pepper.
Assembling the Bowl
  1. In a bowl, layer quinoa, mixed greens, roasted vegetables, and diced chicken.
  2. Drizzle with creamy dressing before serving.

Notes

Serve in wide, shallow bowls; additional dressing can be drizzled on top. Add nuts or seeds for extra crunch. Store leftovers in an airtight container in the refrigerator, keeping dressing separate until serving.
