Ingredients
  

For the Rice
  • 1 cup rice Cook according to package instructions
  • 2 tbsp lime juice For mixing into rice
  • 1/4 cup chopped cilantro For mixing into rice
For the Chicken
  • 1 lb chicken strips Marinate with spices before grilling
  • 2 tbsp olive oil For marinating chicken
  • 1 tbsp spices Cumin and chili powder recommended for seasoning chicken
For Toppings
  • 1-2 cups vegetables Like bell peppers and tomatoes, for toppings
  • 1 cup corn Grill until slightly charred

Method
 

Preparation
  1. Prepare 1 cup of rice according to package instructions until fluffy and tender.
  2. Stir in 2 tablespoons of lime juice and 1/4 cup of chopped cilantro for a fresh, zesty touch.
  3. Toss 1 pound of chicken strips in 2 tablespoons of olive oil and 1 tablespoon of spices. Let sit for at least 15 minutes to infuse the flavors.
  4. Slice your choice of 1-2 cups of vegetables while the chicken is marinating.
Cooking
  1. Heat your grill to medium-high and cook the marinated chicken for 6-7 minutes on each side until it’s no longer pink and juicy.
  2. Place 1 cup of corn on the grill, turning occasionally until it’s slightly charred and bursting with flavor.
Serving
  1. In bowls, layer the lime-cilantro rice, grilled chicken, and your choice of vibrant veggies and corn.
  2. Allow everyone to customize their own bowls with additional toppings like sour cream, guacamole, or salsa.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop.
