Grilled Zucchini Caprese Stacks

Ingredients
  

Main Ingredients
  • 2 medium zucchinis Choose firm, fresh zucchinis for the best flavor and texture.
  • 1 large tomato
  • 8 ounces fresh mozzarella cheese Slice into similar thicknesses as zucchini.
  • to taste salt and pepper
  • olive oil, for grilling
  • fresh basil leaves
Basil Vinaigrette
  • 1/4 cup fresh basil leaves
  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the grill to medium heat.
  2. Slice the zucchinis lengthwise into 1/4-inch thick strips.
  3. Brush both sides of the zucchini slices with olive oil and season with salt and pepper.
Grilling
  1. Grill the zucchini for about 3-4 minutes on each side until tender and grill marks appear.
  2. Remove from the grill and let cool slightly.
Assembling
  1. Slice the tomato and mozzarella cheese into similar thicknesses as the zucchini.
  2. To assemble the stacks, layer a slice of grilled zucchini, followed by a slice of tomato, and then a slice of mozzarella. Repeat the layers until you have several stacks.
  3. Drizzle the stacks with basil vinaigrette and decorate with fresh basil leaves.
Making Basil Vinaigrette
  1. Blend all basil vinaigrette ingredients in a blender or food processor until smooth. Adjust seasoning as needed.

Notes

Serve at room temperature or slightly warm. Pair with a light salad or grilled bread for a complete meal. Refrigerate leftovers in an airtight container for up to 2 days.
