Ingredients
  

Main Ingredients
  • 1 lb ground turkey Lean protein base
  • 1 medium onion, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth Low-sodium for health benefits
  • 1 can diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup corn (fresh or frozen)
  • 2 teaspoons dried thyme
  • to taste Salt and pepper
  • to garnish Fresh herbs (parsley or basil)

Method
 

Preparation
  1. In a large pot, heat a little oil over medium heat. Add the ground turkey and cook until browned.
  2. Add the onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  3. Stir in the garlic and cook for another minute.
Cooking
  1. Pour in the broth and add the diced tomatoes, green beans, corn, and thyme.
  2. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  3. Season with salt and pepper to taste.
  4. Serve hot, garnished with fresh herbs.

Notes

Let the soup cool before storing. Refrigerate for up to 4 days or freeze for 3 months. Thaw in the fridge overnight before reheating. For extra flavor, add bay leaves while simmering or red pepper flakes for a kick.
