  • 2 pieces chicken breasts, diced
  • 1 cup pineapple chunks
  • 1 cup shredded cheese (mozzarella or a blend)
  • 1 piece bell pepper, diced (red or green)
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

Cooking
  1. In a skillet, heat olive oil over medium heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and fully cooked.
  2. Add the bell peppers and pineapple chunks to the skillet, cooking for an additional 3-4 minutes until the peppers are tender.
  3. While the chicken and vegetables are cooking, prepare the rice according to package instructions.
  4. To serve, place a portion of rice in a bowl, top with the chicken, pineapple, and pepper mixture, and sprinkle with shredded cheese.
  5. Optionally, place bowls under the broiler for 1-2 minutes to melt the cheese further.

Notes

Serve hot with optional toppings like chopped green onions or barbecue sauce. Pairs well with salad or steamed veggies. For crunch, add chopped nuts. To lighten the dish, use grilled chicken instead of cooking it in oil.
