  • 1/2 cup almond flour Can be substituted with whole wheat or another gluten-free flour.
  • 1/2 cup oats Can be omitted, but consider adding extra flour.
  • 1/4 cup dark chocolate chips Feel free to swap for dried cranberries or raisins.
  • 1/2 teaspoon baking soda
  • Pinch salt A pinch enhances flavors.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mashed bananas, honey (or maple syrup), and vanilla extract.
  3. In another bowl, mix the almond flour, oats, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until well combined.
  5. Fold in the dark chocolate chips.
Baking
  1. Scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Allow to cool before serving.

Notes

These cookies are best served warm. Perfect for lunch boxes or a quick snack during the day. You can sprinkle a little sea salt on top before serving for an extra flavor boost.
