  • 1 cup cottage cheese Can use dairy-free alternative for a vegan option.
  • 1 cup whole wheat flour Can substitute with almond flour or gluten-free flour.
  • 1/2 cup chocolate chips Can substitute with blueberries or nuts.
  • 1/4 cup honey or maple syrup Adjust sweetness according to taste preference.
  • 2 pieces eggs Can replace with flax eggs for a vegan option.
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mash the bananas.
  3. Add the cottage cheese, honey, and eggs, and mix until combined.
  4. In another bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Divide the batter into the prepared muffin tin.
Baking
  1. Bake for 15-20 minutes or until a toothpick comes out clean.
  2. Allow to cool before serving.

Notes

These muffins are best served warm, with or without butter or nut butter. Store in an airtight container at room temperature for up to three days, refrigerate for up to a week, or freeze for up to three months.
