Main Ingredients
  • 1 1/3 cup almond flour
  • 1 cup natural peanut butter Ensure it's natural with no added sugars.
  • 1/4 tsp salt Add if needed.
  • 1/4 cup maple syrup Adjust sweetness to taste.
  • 1 tsp vanilla extract
Coating
  • 1 cup chocolate chips Use dairy-free for vegan option.
  • 1 tsp coconut oil

Method
 

Preparation
  1. In a mixing bowl, combine the almond flour, peanut butter, salt (if necessary), maple syrup, and vanilla extract until well blended.
  2. Roll the mixture into one-inch balls and place them on a parchment-lined baking tray.
  3. Refrigerate the balls for 30 minutes to firm them up.
Coating
  1. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second increments until smooth.
  2. Dip each ball into the melted chocolate using a fork, covering two-thirds of the ball.
  3. Return the chocolate-dipped balls to the tray.
  4. Chill in the fridge for at least 15 minutes to allow the chocolate to set.

Notes

Store healthy buckeyes in an airtight container in the refrigerator for about a week. They pair wonderfully with milk or tea. Experiment with different nut butters for unique flavors.
