- In a mixing bowl, combine the almond flour, peanut butter, salt (if necessary), maple syrup, and vanilla extract until well blended.
- Roll the mixture into one-inch balls and place them on a parchment-lined baking tray.
- Refrigerate the balls for 30 minutes to firm them up.
Coating
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second increments until smooth.
- Dip each ball into the melted chocolate using a fork, covering two-thirds of the ball.
- Return the chocolate-dipped balls to the tray.
- Chill in the fridge for at least 15 minutes to allow the chocolate to set.
Notes
Store healthy buckeyes in an airtight container in the refrigerator for about a week. They pair wonderfully with milk or tea. Experiment with different nut butters for unique flavors.
