Preparation
- Preheat the oven to 350°F (175°C). Grease a cake pan.
- In a large bowl, mix the grated carrots, almond flour, and coconut flour together.
- In another bowl, whisk together the honey (or maple syrup), eggs, applesauce, and vanilla extract.
Mixing
- Combine the wet ingredients with the dry ingredients.
- Mix in the baking powder, baking soda, cinnamon, nutmeg, and salt until well blended.
Baking
- Pour the batter into the prepared cake pan.
- Bake for 25-30 minutes or until a toothpick comes out clean when inserted in the center.
- Let the cake cool before serving.
Notes
This Healthy Carrot Cake can be served plain or topped with Greek yogurt and a drizzle of honey. Store at room temperature for up to three days or wrap tightly in plastic wrap and refrigerate for up to a week. Freeze individual pieces for later enjoyment.
