  • 1/2 cup coconut flour

  • 1/2 cup unsweetened applesauce
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a cake pan.
  2. In a large bowl, mix the grated carrots, almond flour, and coconut flour together.
  3. In another bowl, whisk together the honey (or maple syrup), eggs, applesauce, and vanilla extract.
Mixing
  1. Combine the wet ingredients with the dry ingredients.
  2. Mix in the baking powder, baking soda, cinnamon, nutmeg, and salt until well blended.
Baking
  1. Pour the batter into the prepared cake pan.
  2. Bake for 25-30 minutes or until a toothpick comes out clean when inserted in the center.
  3. Let the cake cool before serving.

Notes
