  • 1 teaspoon lemon juice Enhances flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a blender or food processor, combine the cottage cheese, Greek yogurt, sweetener, vanilla extract, eggs, lemon juice, and salt. Blend until smooth.
  3. Grease a 9-inch springform pan with cooking spray.
  4. Pour the cheesecake mixture into the pan and smooth the top.
Baking
  1. Bake for about 30 to 35 minutes or until the edges are set, and the center still has a little jiggle.
  2. Turn off the oven and leave the cheesecake in for another hour to cool down gradually.
  3. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to five days. Tastes better the next day when flavors have melded. For a firmer cheesecake, add an extra egg or two tablespoons of cornstarch. Try mixing in fruit puree for a swirl before baking.
