Ingredients
  

Wet Ingredients
  • 1 cup cottage cheese (low-fat) For the best texture, use smooth cottage cheese.
  • 1/2 cup unsweetened applesauce
  • 1/2 cup sugar-free sweetener I used NuNaturals! You can also use honey or maple syrup.
  • 1 tsp vanilla extract
  • 1 large egg
Dry Ingredients
  • 2 cups almond flour Ensure it's certified gluten-free if necessary.
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
Mix-ins
  • 1 cup sugar-free dark chocolate chips Feel free to swap with dried fruit or coconut flakes.
  • 1/2 cup chopped nuts Optional but delicious.

Method
 

Preparation
  1. Preheat the oven to 350°F and line a baking sheet with parchment or a silicone mat.
  2. In a bowl, mix the cottage cheese, applesauce, sweetener, vanilla, and egg until smooth and creamy using a hand mixer.
  3. In a separate bowl, whisk together almond flour, baking soda, baking powder, and salt.
  4. Slowly add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing.
  5. Fold in the chocolate chips and nuts if using.
  6. Drop rounded tablespoons of dough onto your prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12–15 minutes until golden at the edges and set in the center. Allow to cool before serving.

Notes

Store these cookies in an airtight container at room temperature for up to one week, or freeze them for up to three months separated by parchment paper.
