Ingredients
  

For the Parfait
  • 2 cups plain, full-fat Greek yogurt
  • 1 cup dried figs, sliced into quarters (Mission or Black Mission figs)
  • 3-4 tablespoons raw, unfiltered honey
  • 1/2 cup nuts (pistachios, walnuts, or almonds)
  • 1 teaspoon pure vanilla extract
  • 1 pinch flaky sea salt

Method
 

Preparation
  1. Rinse the dried figs under warm water to remove any dust and soften them slightly, then pat them dry.
  2. Slice the figs into quarters or thin wedges.
  3. Optional: Toast the nuts in a dry skillet over medium-low heat for 2-3 minutes until fragrant. Remove them immediately to cool.
  4. In a medium bowl, combine the Greek yogurt, vanilla extract, and half of the honey. Stir gently until combined.
Assembly
  1. In a glass or bowl, layer the honey-vanilla yogurt, followed by sliced figs, and then toasted nuts. Repeat to create three layers.
  2. Drizzle the remaining honey over the top, sprinkle with flaky sea salt, and any remaining nuts.
  3. Serve immediately.

Notes

Serve this parfait in clear glasses or bowls to show off the beautiful layers. It’s perfect for breakfast, a midday snack, or even as a light dessert after dinner. If you have leftovers, store the parfait layers separately in the fridge and assemble when ready to eat.
