Ingredients
  

Chicken and Marinade
  • 2 pieces chicken breast (boneless and skinless)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 tablespoon lemon juice Freshly squeezed is best
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Veggies and Grains
  • 2 cups broccoli (florets) Steamed until tender
  • 1 cup quinoa (or brown rice) Cook according to package instructions
  • 1 cup cherry tomatoes (halved)
  • 2 tablespoons parsley (chopped, for garnish)

Method
 

Preparation
  1. In a bowl, mix olive oil, minced garlic, lemon juice, salt, and black pepper.
  2. Marinate the chicken in the mixture for at least 30 minutes.
Cooking
  1. Preheat the oven to 400°F (200°C).
  2. Place marinated chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
  3. Meanwhile, cook quinoa or brown rice according to package instructions.
  4. Steam broccoli until tender.
Assembly
  1. Slice the cooked chicken and assemble bowls with quinoa or rice, steamed broccoli, and cherry tomatoes.
  2. Drizzle with any remaining marinade and garnish with parsley.
  3. Store in meal prep containers for easy grab-and-go lunches.

Notes

Serve bowls warm or cold. They pair well with a light salad or favorite sauce. Store in airtight containers for up to 4-5 days.
