Preparation
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix the lemon juice, minced garlic, Dijon mustard, honey, black pepper, and smoked paprika.
- Place the salmon fillets on a baking sheet. Brush them with olive oil, then pour the lemon-garlic mixture over the fillets.
- On the same baking sheet, arrange the broccoli florets around the salmon. Drizzle the broccoli with a little olive oil and sprinkle with salt.
Cooking
- Roast in the oven for about 12-15 minutes or until the salmon flakes easily with a fork and the broccoli is tender.
- While the salmon and broccoli are cooking, rinse the quinoa under cold water. In a saucepan, combine the quinoa and low-sodium broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Fluff with a fork.
Serving
- Serve the salmon and broccoli over a bed of quinoa, and garnish with fresh parsley and lemon zest.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for a quick meal. You can also add other vegetables to the roasting pan or use chicken instead of salmon for a different protein option.
