Healthy Lemon-Garlic Salmon with Roasted Broccoli & Quinoa Bliss

Ingredients
  

For the Salmon and Broccoli
  • 2 fillets Salmon (rich in omega-3 fatty acids)
  • 1 tablespoon Olive oil (for brushing)
  • 1 whole Lemon (zest and juice) Use fresh lemon juice for the best flavor.
  • 2 cloves Garlic (minced)
  • 1 tablespoon Dijon mustard (for tangy flavor)
  • 1 teaspoon Honey (to sweeten)
  • 1 pinch Black pepper (for seasoning)
  • 1 teaspoon Smoked paprika (for smoky flavor)
  • 2 cups Broccoli florets (packed with vitamins)
For the Quinoa
  • 1 cup Quinoa (protein-rich grain)
  • 2 cups Low-sodium broth or water (for cooking quinoa)
  • 1 teaspoon Salt (to taste)
  • 2 tablespoons Parsley (fresh chopped) For garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix the lemon juice, minced garlic, Dijon mustard, honey, black pepper, and smoked paprika.
  3. Place the salmon fillets on a baking sheet. Brush them with olive oil, then pour the lemon-garlic mixture over the fillets.
  4. On the same baking sheet, arrange the broccoli florets around the salmon. Drizzle the broccoli with a little olive oil and sprinkle with salt.
Cooking
  1. Roast in the oven for about 12-15 minutes or until the salmon flakes easily with a fork and the broccoli is tender.
  2. While the salmon and broccoli are cooking, rinse the quinoa under cold water. In a saucepan, combine the quinoa and low-sodium broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Fluff with a fork.
Serving
  1. Serve the salmon and broccoli over a bed of quinoa, and garnish with fresh parsley and lemon zest.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for a quick meal. You can also add other vegetables to the roasting pan or use chicken instead of salmon for a different protein option.
