Filling Ingredients
  • 1/2 cup natural peanut butter drippy is best
  • 1/4 cup coconut flour OR 3/4 cup almond flour
  • 2 tbsp maple syrup
Coating Ingredients
  • 1 cup dark chocolate chips or chopped bar
  • 1 tsp coconut oil

Method
 

Preparation
  1. In a medium mixing bowl, combine the peanut butter, flour of choice, and maple syrup. Stir until a thick dough forms.
  2. Using your hands, shape the dough into 9 even egg-like ovals. Place them on a parchment-lined baking sheet.
  3. Transfer the baking sheet to the freezer for 30 minutes to set.
Dipping
  1. In a microwave-safe bowl, melt the dark chocolate and coconut oil in 30-second increments, stirring after each until smooth.
  2. Remove the eggs from the freezer. Using a fork, dip each egg into the melted chocolate, tapping off any excess. Place them back on the parchment paper.
  3. Return to the freezer for another 30 minutes to allow the chocolate shell to harden.

Notes

To keep your Healthy Reese’s Eggs fresh, store them in an airtight container in the fridge for up to a week. If you want them to last longer, store them in the freezer, letting them thaw for a few minutes after taking them out for best flavor and texture. Feel free to adjust the sweetness by adding more maple syrup.
