Ingredients
  

For the chicken tenders
  • 1 pound chicken tenders
  • 1 cup mixed seeds (such as sesame, sunflower, and pumpkin)
  • 1/2 cup almond flour
  • 2 large eggs
  • to taste salt add to taste
  • to taste pepper add to taste
  • 1 tablespoon olive oil for drizzling
For the dipping sauce
  • 1/4 cup maple syrup
  • 2 tablespoons sriracha sauce
  • 1 tablespoon apple cider vinegar

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the mixed seeds and almond flour with salt and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each chicken tender into the beaten eggs, then coat with the seed mixture, pressing to adhere.
  5. Place the coated chicken tenders on the prepared baking sheet and drizzle with olive oil.
Cooking
  1. Bake for 15-20 minutes or until golden brown and cooked through.
Dipping Sauce
  1. For the dipping sauce, mix maple syrup, sriracha, and apple cider vinegar in a small bowl.

Notes

Make sure to press the seed mixture onto the chicken well so it sticks during baking. Customize the seed mixture based on your preferences. For extra spice, add more sriracha to the dipping sauce.
