  • 1 teaspoon vanilla extract For added flavor.
  • 1/2 teaspoon espresso powder Optional, but enhances the tiramisu flavor.
  • 1 pinch salt Balances the sweetness.

Method
 

Preparation
  1. In a blender or food processor, combine the cottage cheese, protein powder, cocoa powder, sweetener, vanilla extract, espresso powder, and salt.
  2. Blend until smooth and creamy.
  3. Scoop out the mixture onto a baking sheet lined with parchment paper.
  4. Shape into cookie-like rounds.
  5. Refrigerate for at least 30 minutes to set.

Notes

Store cookies in an airtight container in the refrigerator for up to a week, or freeze them for longer storage. Thaw in the fridge before eating. They are best served chilled.
