- In a blender or food processor, combine the cottage cheese, protein powder, cocoa powder, sweetener, vanilla extract, espresso powder, and salt.
- Blend until smooth and creamy.
- Scoop out the mixture onto a baking sheet lined with parchment paper.
- Shape into cookie-like rounds.
- Refrigerate for at least 30 minutes to set.
Notes
Store cookies in an airtight container in the refrigerator for up to a week, or freeze them for longer storage. Thaw in the fridge before eating. They are best served chilled.
