  • 1/4 cup milk (dairy or plant-based) Optional: Adjust based on desired batter consistency.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional) Feel free to omit if not desired.
  • 1/4 cup grated Parmesan cheese Can use other cheeses for variation.
  • 2 tablespoons olive oil or melted coconut oil For brushing the waffle iron.

Preparation
  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. Grate the zucchinis and use a clean kitchen towel or paper towels to squeeze out excess moisture thoroughly.
  3. In a large bowl, whisk together the eggs and milk until well combined.
  4. Add the whole wheat flour, baking powder, salt, pepper, and garlic powder to the wet ingredients, mixing until a smooth batter forms.
  5. Fold the grated zucchini and Parmesan cheese into the batter gently.
  6. Brush the waffle iron with a little oil to prevent sticking.
Cooking
  1. Pour enough batter onto the waffle iron to cover the surface evenly and close the lid.
  2. Cook the waffles for 4-6 minutes or until they are golden brown and crisp.
  3. Carefully remove the waffles and serve warm with your favorite toppings.

Notes

To store leftover waffles, let them cool completely, then place them in an airtight container in the refrigerator for up to 3 days. You can also freeze them for about a month. Ensure to squeeze out as much moisture from the zucchinis as possible to avoid soggy waffles. Customize with diced peppers or shredded carrots for extra flavor.
