- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula. Drain excess fat if needed.
- Stir in the diced sweet potatoes, salt, pepper, paprika, cumin, and red pepper flakes. Cover and cook for 10 minutes, stirring occasionally, until the sweet potatoes are tender.
- Mix in the zucchini and cover again. Cook for another 5-7 minutes, until the zucchini is soft.
- Remove from heat and sprinkle shredded cheese on top. Cover for a couple of minutes until the cheese melts.
- Finish with fresh parsley and a squeeze of lemon juice before serving.
Notes
For best results, use fresh vegetables. You can customize the recipe by adding other vegetables or adjusting seasoning to taste.
