  • 1 to 1.5 pounds Ground Beef (80/20 blend for best flavor)
  • 2 medium Sweet Potatoes (peeled and diced into ½-inch cubes)
  • 2 medium Zucchini (diced or sliced into half-moons)
  • 1 medium Onion (chopped)
  • 2-3 cloves Garlic (minced)
  • 1-2 tablespoons Olive Oil (for sautéing)
  • 1 teaspoon Salt (or to taste)
  • ½ teaspoon Black Pepper (or to taste)
  • 1 teaspoon Paprika (adds warmth and color)
  • ½ teaspoon Cumin (optional, recommended)
  • ¼ teaspoon Red Pepper Flakes (optional, for heat)
  • ½ cup Shredded Cheese (cheddar or Monterey Jack)
  • Fresh Parsley (chopped)
  • Lemon Juice (a squeeze before serving)

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula. Drain excess fat if needed.
  4. Stir in the diced sweet potatoes, salt, pepper, paprika, cumin, and red pepper flakes. Cover and cook for 10 minutes, stirring occasionally, until the sweet potatoes are tender.
  5. Mix in the zucchini and cover again. Cook for another 5-7 minutes, until the zucchini is soft.
  6. Remove from heat and sprinkle shredded cheese on top. Cover for a couple of minutes until the cheese melts.
  7. Finish with fresh parsley and a squeeze of lemon juice before serving.

Notes

For best results, use fresh vegetables. You can customize the recipe by adding other vegetables or adjusting seasoning to taste.
