Main Ingredients
  • 1 cup cottage cheese Blend until smooth.
  • 4 large eggs Room temperature.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup blueberries Fresh or thawed if using frozen.
  • to taste optional Sweetener of choice Honey or maple syrup can be used.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, blend the cottage cheese until smooth.
  3. Add the eggs, baking powder, and salt to the blended cottage cheese and mix until well combined.
  4. Gently fold in the blueberries.
  5. Spoon the mixture onto the prepared baking sheet, forming small mounds.
Baking
  1. Bake for 20-25 minutes or until golden and puffed.
  2. Allow to cool slightly before serving.

Notes

Serve warm or at room temperature. Pairs well with Greek yogurt or honey. For storage, keep in an airtight container in the fridge for up to three days or freeze for up to three months.
