Ingredients
  

Main Ingredients
  • 1 cup black beans, rinsed and drained Make sure to rinse well to remove excess sodium.
  • 1/2 cup peanut butter or almond butter Use sunflower seed butter for nut allergies.
  • 1/3 cup honey or maple syrup Adjust to taste if you prefer sweeter bites.
  • 1/4 cup cocoa powder Unsweetened cocoa works best.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional) Use dairy-free chips for a vegan version.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a blender or food processor, combine black beans, peanut butter, honey, cocoa powder, vanilla extract, baking powder, and salt until smooth.
  3. Stir in the chocolate chips if using.
  4. Spoon the mixture into the mini muffin pan, filling each cup about 3/4 full.
Baking
  1. Bake for 15-20 minutes or until a toothpick comes out clean.
  2. Allow to cool before serving. Enjoy your high-protein brownie bites!

Notes

These brownie bites are great on their own or served with Greek yogurt. Store leftovers in an airtight container for up to 3 days or refrigerate for up to a week. They can also be frozen for a month.
