Preparation
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
- In a blender or food processor, combine black beans, peanut butter, honey, cocoa powder, vanilla extract, baking powder, and salt until smooth.
- Stir in the chocolate chips if using.
- Spoon the mixture into the mini muffin pan, filling each cup about 3/4 full.
Baking
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving. Enjoy your high-protein brownie bites!
Notes
These brownie bites are great on their own or served with Greek yogurt. Store leftovers in an airtight container for up to 3 days or refrigerate for up to a week. They can also be frozen for a month.
