Ingredients
  

For the Quesadilla
  • 2 pieces Low-carb tortilla Can substitute with regular tortillas if desired
  • 1/2 cup Greek yogurt Use as a spread on the tortilla
  • 2 slices Laughing Cow cheese Different flavors can be used for variety
  • 1 cup Cooked chicken breast Shredded or sliced
  • 1 tablespoon Ranch seasoning Add more for a stronger flavor
  • 1 tablespoon Olive oil or cooking spray For greasing the skillet

Method
 

Preparation
  1. Heat a non-stick skillet over medium heat and add a little olive oil or cooking spray.
  2. Spread Greek yogurt on one side of the low-carb tortilla.
  3. Layer slices of Laughing Cow cheese and cooked chicken on top of the yogurt.
  4. Sprinkle ranch seasoning over the chicken.
  5. Fold the tortilla in half and place it in the skillet.
  6. Cook for 3-5 minutes on each side, or until golden brown and crispy.
  7. Remove from heat, allow to cool slightly, then cut into wedges and serve.

Notes

Serve with a side of fresh salad, salsa, or guacamole for extra flavor. You can also dip it in Greek yogurt. Store leftovers in an airtight container in the fridge for up to 3 days.
