Preparation
- Heat a non-stick skillet over medium heat and add a little olive oil or cooking spray.
- Spread Greek yogurt on one side of the low-carb tortilla.
- Layer slices of Laughing Cow cheese and cooked chicken on top of the yogurt.
- Sprinkle ranch seasoning over the chicken.
- Fold the tortilla in half and place it in the skillet.
- Cook for 3-5 minutes on each side, or until golden brown and crispy.
- Remove from heat, allow to cool slightly, then cut into wedges and serve.
Notes
Serve with a side of fresh salad, salsa, or guacamole for extra flavor. You can also dip it in Greek yogurt. Store leftovers in an airtight container in the fridge for up to 3 days.
