High-Protein Chicken Salad Wrap

Ingredients
  

For the Chicken Salad
  • 2 cups cooked chicken breast, shredded or diced Use rotisserie chicken for quicker prep.
  • ½ cup plain Greek yogurt Provides creaminess and protein.
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 stalks celery, finely diced
  • ¼ cup red onion, finely diced Soak in cold water for milder flavor.
  • 2 tablespoons fresh dill, chopped Feel free to substitute with other herbs.
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • 1 tablespoon lemon juice, fresh squeezed
For Assembly
  • 4 large flour tortillas (10-inch size) Can be substituted with gluten-free tortillas.
  • 4 leaves romaine lettuce, washed and dried
  • 1 large tomato, sliced thin
  • 1 medium avocado, sliced (optional) Adds creaminess and flavor.

Method
 

Preparation
  1. Prep your chicken: If using rotisserie chicken, remove the skin and shred the meat to get about 2 cups. If using cooked chicken breasts, dice them into small, bite-sized pieces.
  2. Dice your veggies: Finely dice the celery and red onion. For a milder onion flavor, soak the diced pieces in cold water for 5 minutes, then drain.
  3. Make the dressing: In a mixing bowl, combine Greek yogurt, mayonnaise, Dijon mustard, lemon juice, smoked paprika, garlic powder, salt, and pepper. Whisk until smooth. Taste and adjust seasoning.
  4. Combine everything: Add shredded chicken, diced celery, diced red onion, and fresh dill to the bowl with the dressing. Fold gently with a rubber spatula until everything is evenly coated.
  5. Chill for 10 minutes: Let the chicken salad sit in the fridge while you prepare the wrap ingredients to allow the flavors to meld.
Wrapping
  1. Warm your tortillas: Microwave tortillas for 15 seconds wrapped in a damp paper towel, or heat in a dry skillet for about 20 seconds per side until pliable.
  2. Assemble the wraps: Lay a tortilla flat. Place a lettuce leaf slightly off-center toward the bottom. Add a few slices of tomato and avocado (if using). Spoon about ¾ cup of chicken salad onto the lettuce.
  3. Roll it up: Fold the bottom of the tortilla over the filling. Fold in the sides, then roll tightly away from you, keeping everything snug. Place seam-side down.
  4. Slice and serve: Cut each wrap in half diagonally. Serve immediately or refrigerate for up to 4 hours.

Notes

These wraps are best served fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 4 days. To make it vegetarian, substitute chicken with chickpeas or tofu.
