Ingredients
  

For the Yogurt Base
  • 1 cup plain Greek yogurt Use natural and unsweetened
  • ½ cup natural peanut butter Make sure it's natural for a healthier option
  • 2 tablespoons honey or maple syrup Can substitute with agave syrup
  • ½ teaspoon vanilla extract For added flavor
For the Coating and Toppings
  • ¾ cup dark chocolate chips Optional for coating
  • 1 teaspoon coconut oil To help with melting chocolate
  • to taste crushed peanuts For topping
  • to taste mini chocolate chips For topping
  • to taste shredded coconut For topping
  • to taste chia seeds For topping

Method
 

Preparation
  1. In a mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and creamy.
  2. Line a baking tray with parchment paper to prevent the bites from sticking.
  3. Use a spoon or cookie scoop to drop mixture portions onto the prepared tray.
  4. Place the tray in the freezer and let the bites freeze for about 2 hours, or until firm.
Coating (Optional)
  1. If you want to coat the bites, melt the dark chocolate chips with coconut oil in a microwave or over a double boiler.
  2. Dip each frozen bite into the melted chocolate. Then, return them to the tray and add your favorite toppings.
  3. Put the tray back in the freezer for about 30 minutes to set the chocolate.
Serving
  1. Enjoy these bites straight from the freezer as a yummy snack or dessert.
  2. They also make a great addition to a healthy breakfast or a post-workout treat.

Notes

Store bites in an airtight container in the freezer for up to 3 months. Experiment with different toppings for variety. If the mixture is too thick, add a little more Greek yogurt.
