Preparation
- In a mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and creamy.
- Line a baking tray with parchment paper to prevent the bites from sticking.
- Use a spoon or cookie scoop to drop mixture portions onto the prepared tray.
- Place the tray in the freezer and let the bites freeze for about 2 hours, or until firm.
Coating (Optional)
- If you want to coat the bites, melt the dark chocolate chips with coconut oil in a microwave or over a double boiler.
- Dip each frozen bite into the melted chocolate. Then, return them to the tray and add your favorite toppings.
- Put the tray back in the freezer for about 30 minutes to set the chocolate.
Serving
- Enjoy these bites straight from the freezer as a yummy snack or dessert.
- They also make a great addition to a healthy breakfast or a post-workout treat.
Notes
Store bites in an airtight container in the freezer for up to 3 months. Experiment with different toppings for variety. If the mixture is too thick, add a little more Greek yogurt.
