  • 1/2 cup Greek yogurt (high protein)
  • 1-2 tablespoons honey or low-calorie sweetener Adjust based on your sweetness preference.
  • 1 scoop protein powder (optional, vanilla or unflavored) For added protein.
  • 2 tablespoons cream cheese (optional, for richer texture) Use softened for easier mixing.
  • 1 teaspoon vanilla extract (optional)

Method
 

Preparation
  1. In a bowl or jar, mix chia seeds with milk and stir well. Let it sit for 5 minutes, then stir again to prevent clumping.
  2. Blend the strawberries into a smooth puree and mix it into the chia base.
  3. Add the Greek yogurt, protein powder (if using), sweetener, and vanilla extract. Stir until smooth and well combined.
  4. For a richer cheesecake texture, mix in softened cream cheese until fully incorporated.
  5. Cover and refrigerate for at least 4 hours or overnight until thickened.
  6. Stir before serving and top with fresh strawberries or graham crumbs if desired.

Notes

Stir the chia seeds occasionally while they are soaking to prevent clumping. Adjust the sweetness according to your taste. Use a high-quality protein powder for the best flavor and texture. Store in an airtight container in the refrigerator for up to 3 days.
