This homemade creamy lobster bisque combines tender lobster with a smooth, buttery base of onion, carrot, celery, garlic, tomato paste, stock, cream, and milk. Blended until velvety and gently finished with lobster, it makes a rich seafood soup that feels special without being complicated.

Ingredients
  

  • 2 lobster tails, or 1 1/2 to 2 lb cooked lobster meat, chopped
  • Lobster shells, optional, for extra flavor
  • 4 tbsp unsalted butter
  • 1 small onion, finely diced
  • 1 carrot, finely diced
  • 1 stalk celery, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp all purpose flour
  • 3 cups seafood stock or chicken stock
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper, optional
  • Salt and black pepper, to taste
  • Extra heavy cream, for drizzling
  • Fresh parsley or chives, chopped

Method
 

  1. If using raw lobster tails, boil or steam them for 6 to 8 minutes until opaque. Cool slightly, remove the lobster meat, chop, and set aside.
  2. Melt the butter in a large pot over medium heat. Add the onion, carrot, and celery and cook for 5 to 7 minutes until softened. Stir in the garlic and cook for 30 seconds.
  3. Stir in the tomato paste and cook for 2 minutes, stirring frequently to deepen the flavor of the lobster bisque.
  4. Sprinkle the flour over the vegetables and stir continuously for 1 to 2 minutes.
  5. Slowly whisk in the seafood or chicken stock. Bring to a gentle simmer and cook for 10 to 15 minutes until slightly thickened.
  6. Carefully blend the bisque with an immersion blender until smooth and velvety.
  7. Reduce the heat to low. Stir in the heavy cream, whole milk, paprika, cayenne pepper, salt, and black pepper. Gently simmer for 5 minutes.
  8. Fold the chopped lobster meat into the creamy bisque. Heat gently for 2 to 3 minutes without boiling so the lobster stays tender.
  9. Ladle the creamy lobster bisque into bowls. Drizzle with a little extra heavy cream and finish with parsley or chives and freshly cracked black pepper.

Notes

If using raw lobster tails, cook them just until opaque before removing the meat from the shells.
Lobster shells may be used for extra flavor if desired.
Cook the onion, carrot, and celery until softened before adding the garlic.
Cook the tomato paste briefly to deepen the flavor of the bisque.
Whisk the stock in slowly to help keep the base smooth.
Blend carefully until the bisque is smooth and velvety.
After adding the cream and lobster, keep the heat gentle and avoid boiling so the bisque stays smooth and the lobster remains tender.
