Main Ingredients
  • 2 lbs ground beef Can use ground turkey or chicken for a lighter version.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans kidney beans, drained Canned beans are convenient; just drain and rinse.
  • 2 cans diced tomatoes
  • 1 can tomato sauce
  • 2 tablespoons chili powder Adjust for more heat.
  • 1 teaspoon cumin
  • to taste Salt and pepper
Toppings (Optional)
  • 1 shredded cheese For topping.
  • 1 sour cream For topping.
  • 2 green onions, chopped For topping.

Method
 

Preparation
  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent.
Cooking
  1. Stir in the kidney beans, diced tomatoes, and tomato sauce.
  2. Add the chili powder, cumin, salt, and pepper.
  3. Bring to a boil, then reduce heat and let simmer for at least 30 minutes.
Serving
  1. Serve hot, topped with shredded cheese, sour cream, and green onions if desired.

Notes

Let the chili simmer longer than 30 minutes for extra flavor. Adjust spices to taste; add more chili powder for heat or mix in other beans for variety. Serve with cornbread, rice, or tortilla chips.
