Ingredients
  

  • 3 salmon fillets
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp dried parsley
  • 1/2 tsp dried oregano
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tbsp butter, melted
  • 1/2 tsp paprika
  • 1 1/2 cups long grain rice
  • 2 1/2 cups chicken broth
  • 1 tbsp butter
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • 1 tbsp chopped parsley
  • 3 cups broccoli florets
  • 1 tbsp olive oil or butter
  • Salt and black pepper, to taste
  • 1/2 tsp garlic powder
  • 1/2 cup mango, diced
  • 1/2 cup tomatoes, diced
  • 2 tbsp red onion, finely diced
  • 1 tbsp parsley or cilantro, chopped
  • 1 tsp lemon or lime juice
  • 1 pinch salt

Method
 

  1. Rinse the rice. Melt the butter in a saucepan, then add the rice, turmeric, garlic powder, and onion powder. Cook for 1 to 2 minutes. Pour in the chicken broth, season with salt and black pepper, cover, and simmer for 15 to 18 minutes. Rest for 5 minutes, then fluff with a fork and stir in the parsley.
  2. Whisk together the honey, soy sauce, lemon juice, minced garlic, melted butter, and paprika until well combined.
  3. Pat the salmon fillets dry. Rub with olive oil, then season evenly with paprika, garlic powder, black pepper, salt, dried parsley, and oregano.
  4. Heat a skillet over medium high heat. Sear the salmon for 3 to 4 minutes per side until beautifully browned and nearly cooked through. Brush generously with the honey garlic glaze and cook for another 1 to 2 minutes, turning carefully until the salmon is glossy and caramelized.
  5. Steam the broccoli for 4 to 6 minutes until tender but still slightly crisp. Toss with olive oil or butter, garlic powder, salt, and black pepper.
  6. Combine the mango, tomatoes, red onion, parsley or cilantro, lemon or lime juice, and salt. Mix gently to keep the mango pieces intact.
  7. Spoon the seasoned rice onto plates and add the honey garlic glazed salmon and broccoli. Top the salmon with fresh mango salsa and finish with chopped parsley and an extra spoonful of glaze.

Notes

Pat the salmon dry before seasoning so it sears and browns more effectively.
Brush the honey garlic glaze onto the salmon near the end of cooking to help prevent the honey from burning.
Cook the rice covered until tender, then let it rest for 5 minutes before fluffing.
Steam the broccoli only until tender but still slightly crisp.
Mix the mango salsa gently so the fruit pieces stay intact.
Serve with an extra spoonful of honey garlic glaze for more flavor.
