Ingredients
  

For the Salmon
  • 4 fillets salmon fillets Fresh or thawed if frozen.
  • 3 tbsp honey Use fresh honey for best flavor.
  • 2 tbsp soy sauce Use gluten-free soy sauce or tamari for gluten-free option.
  • 1 cup brown rice Cook according to package instructions.
For the Bowls
  • 1 large avocado Sliced.
  • 1 large cucumber Sliced.
  • 0.5 cup cilantro Fresh, chopped.
  • 2 tbsp lime juice Freshly squeezed.

Method
 

Preparation
  1. In a bowl, mix honey, soy sauce, salt, and pepper to create the glaze.
  2. Preheat a pan over medium heat.
Cooking the Salmon
  1. Cook the salmon fillets, skin-side down, for about 5 minutes.
  2. Brush the honey glaze over the salmon and flip it, cooking for another 3-4 minutes until it’s cooked through.
Assembling the Bowls
  1. Prepare brown rice according to package instructions.
  2. Slice the avocado and cucumber.
  3. In a small bowl, combine cilantro and lime juice.
  4. Assemble the bowls with brown rice, salmon, avocado, cucumber, and drizzle with the cilantro lime dressing. Serve warm.

Notes

If you have leftovers, store them in an airtight container in the refrigerator. The salmon and vegetables can generally last for 2-3 days. When ready to enjoy again, reheat the salmon gently to avoid drying it out. The rice can be reheated separately. Make sure to not overcook the salmon; it should be flaky but still moist. Feel free to add more veggies like steamed broccoli or carrots to the bowls, and for more texture, sprinkle some sesame seeds on top before serving.
