Preparation
- Season the chicken breasts with salt and pepper on both sides.
- In a small bowl, mix together the honey and lime juice.
Cooking
- Heat the olive oil in a skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C).
- During the last few minutes of cooking, pour the honey-lime mixture over the chicken, allowing it to glaze the meat.
Serving
- Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing.
- Serve the sliced chicken on a plate with avocado slices on the side. Add optional salad greens or rice for a complete meal.
Notes
Make sure your chicken breasts are of even thickness for uniform cooking. If you like a bit of spice, consider adding a pinch of cayenne pepper to the honey-lime mixture. Use ripe avocados for the best texture, but not overripe as they can become mushy.
