Hot Honey Apple Cheddar Beef Bacon Grilled Cheese

A delightful twist on the classic grilled cheese, featuring sharp cheddar, crispy beef bacon, sweet Granny Smith apples, and drizzled with hot honey.

Ingredients
  

For the Sandwich
  • 8 slices artisan bread (sourdough recommended) Any type of bread can be used.
  • 4 tablespoons unsalted butter, softened For spreading on the bread.
  • 8 slices thick-cut beef bacon Can substitute with turkey bacon or prosciutto.
  • 6 ounces sharp cheddar cheese, grated or thinly sliced Aged cheddar recommended for more flavor.
  • 1 medium Granny Smith apple, thinly sliced Approximately 1/8-inch thick slices.
  • 2 tablespoons Hot Honey Can use regular honey if desired.
  • Pinch flaky sea salt (optional) For serving.
For the Hot Honey (Optional)
  • ½ cup honey For making hot honey from scratch.
  • 1-2 tablespoons red pepper flakes Adjust for desired spiciness.
  • ½ teaspoon apple cider vinegar (optional) Adds tanginess if using in hot honey.

Method
 

Prepare Hot Honey (Optional)
  1. In a small saucepan, combine honey, red pepper flakes, and optional apple cider vinegar. Gently heat over low for 5-7 minutes until fluid; do not boil. Let steep for 15-20 minutes.
  2. Strain if desired and store at room temperature.
Cook Beef Bacon
  1. Cook beef bacon until crispy, either stovetop or oven.
  2. Stovetop: Preheat skillet over medium heat, and cook 8-12 minutes, flipping.
  3. Oven: Bake at 400°F (200°C) for 15-20 minutes on a lined baking sheet.
  4. Drain on paper towels, reserving about 1 tablespoon rendered fat, and break bacon into 2-3 pieces.
Prepare Apple and Cheese
  1. Wash, core, and thinly slice the Granny Smith apple.
  2. Grate or thinly slice the sharp cheddar cheese.
Assemble Sandwiches
  1. Butter one side of all bread slices. On 4 unbuttered sides, layer half the cheddar cheese, then apple slices, followed by broken beef bacon.
  2. Drizzle 1 tablespoon hot honey over each and top with remaining cheddar cheese.
  3. Place the remaining bread slices on top, butter-side-up.
Grill Sandwiches
  1. Preheat a skillet over medium-low heat with reserved bacon fat or butter.
  2. Place sandwiches butter-side down, and cook for 4-6 minutes per side until golden-brown and cheese is melted.
Finish and Serve
  1. Let the grilled sandwiches rest for 2-3 minutes before cutting diagonally.
  2. Sprinkle with flaky sea salt or extra hot honey, and serve immediately.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on low in a skillet or microwave.
