  • 4 oz cream cheese (softened) Use full-fat for a creamier filling.
  • 1/4 cup confectioners' sugar
  • 1 tsp vanilla extract (pure is best)
  • 1/2 cup fresh strawberries (diced)
For the French Toast
  • 8 slices thick-cut brioche or challah
  • 4 large eggs (preferably organic)
  • 1 cup whole milk
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 tbsp unsalted butter (for frying)
  • 1 cup fresh strawberries (sliced for topping)
  • 1/4 cup maple syrup or strawberry syrup
  • 1 cup whipped cream (optional)
  • 1 tbsp powdered sugar (for dusting)

Preparation of Filling
  1. In a medium bowl, combine softened cream cheese, confectioners' sugar, and vanilla extract. Stir until smooth and creamy.
  2. Gently fold in the diced strawberries.
Preparation of French Toast
  1. In a shallow dish, whisk together eggs, whole milk, cinnamon, and salt until well combined.
  2. Spread about 2 tablespoons of the cream cheese mixture on one side of a slice of bread. Top with another slice to form a sandwich. Repeat with the remaining slices.
  3. In a large non-stick skillet, melt unsalted butter over medium heat.
  4. Carefully dip each sandwich into the egg mixture, soaking for about 10 seconds on each side.
  5. Place the soaked sandwiches in the skillet and cook for about 3-4 minutes per side, or until golden brown.
  6. Remove the French toast from the skillet and serve topped with fresh strawberries, drizzled with syrup, and dusted with powdered sugar.

Notes

For the best flavor, let the assembled sandwiches sit for a few minutes before cooking. Use blueberries or raspberries for variety, and consider adding a splash of orange juice for a citrus twist.
