  • 1 cup cottage cheese
  • 1 cup almond flour Can substitute with another flour type
  • 1/4 cup honey or low-carb sweetener
  • 1 tablespoon lemon zest Add more for extra flavor
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup blueberries Gently fold in to keep whole

Preparation
  1. Heat the oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. Blend the cottage cheese until creamy and smooth.
  3. Stir together the cottage cheese, sweetener, lemon zest, lemon juice, and vanilla in a bowl.
  4. Mix in the almond flour, baking powder, and salt until a soft dough comes together.
  5. Gently fold in the blueberries.
  6. Scoop and shape the mixture into small balls.
  7. Arrange the bites on the tray and bake for 12 to 15 minutes until lightly golden and set.

Notes

These bites can be enjoyed warm or at room temperature. They pair well with tea or coffee. Store in an airtight container for up to five days or freeze for longer storage.
