  • 1-1.5 lb Salmon fillets At least 1 inch thick
  • ¼ cup Fresh lemon juice
  • 1 each Zest of 1 lemon
  • ¼ cup Olive oil
  • 2 tsp Garlic, minced
  • 2 Tbsp Fresh herbs – parsley
  • 2 tsp Fresh herbs – rosemary
  • 1 tsp Dijon mustard or honey (optional)
  • Salt & freshly cracked black pepper To taste

Method
 

Preparation
  1. Pat salmon dry and place it in a shallow dish or zip-top bag.
  2. In a bowl, whisk together lemon juice, olive oil, garlic, lemon zest, herbs, mustard or honey, salt, and pepper.
  3. Pour marinade over salmon. Turn to coat. Let marinate for 30 minutes in the fridge.
Grilling
  1. Preheat grill to medium-high heat. Brush grill grates with oil.
  2. Place salmon skin-side down on the grill. Cook for 3–8 minutes per side, depending on thickness.
  3. Check for doneness (internal temp ~145°F or flakes easily). Remove and let rest for 2–3 minutes.
  4. Garnish with fresh herbs and lemon slices before serving.

Notes

Serve the grilled salmon with a light salad, steamed vegetables, or alongside rice/quinoa to soak up any extra marinade. A sprinkle of fresh herbs and a wedge of lemon enhance the dish.
