Ingredients
  

Main ingredients
  • 3 cups white beans, cooked, rinsed and well-drained (two 15-ounce cans)
  • ½ cup chopped parsley, packed
  • cup chopped chives, packed
  • 2 cloves garlic
  • ¼ cup olive oil, extra virgin For a creamier texture, add more
  • Juice of half a lemon
  • 1-2 teaspoons lemon zest
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon onion powder (optional)
  • 2 teaspoons fresh rosemary (optional)
  • A handful of roasted walnuts (optional) For extra crunch

Method
 

Preparation
  1. Combine all ingredients in a food processor.
  2. Blend until smooth, adjusting the consistency with water or more olive oil if needed.
  3. Season to taste with salt and pepper.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve with fresh vegetables, pita chips, or as a spread. Great for parties or a cozy night in. Store leftovers in an airtight container for up to five days or freeze for three months. May need a quick stir and taste check after thawing.
