  • ½ cup almond butter (or your preferred nut butter) You can substitute with any nut or seed butter.
  • ¼ cup honey or maple syrup Use maple syrup for a vegan option.
  • 1 zest zest of 1 lemon
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground turmeric
  • ½ teaspoon vanilla extract
  • pinch salt
  • Optional: shredded coconut or chopped nuts for rolling

Preparation
  1. In a large bowl, combine the rolled oats, almond butter, honey, lemon zest, lemon juice, turmeric, vanilla extract, and salt.
  2. Mix everything together until it forms a sticky dough. You might find it easier to use your hands.
  3. Once the mixture is well combined, scoop out small amounts and roll them into balls, about 1 inch in diameter.
  4. If you like, roll the balls in shredded coconut or chopped nuts for added texture.
  5. Place them on a plate or tray and freeze for about 30 minutes to set.

Notes

Store your Lemon Turmeric Energy Balls in an airtight container in the refrigerator for about a week or freeze for up to three months. If the mixture is too dry, add a little more nut butter or honey. Adjust sweetness to taste.
