  • 1 16 oz bag tortilla chips
  • 2 cups full-fat cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup diced red onion
  • 1 jalapeño (sliced)
  • 1/2 cup black beans (drained and rinsed)
  • 1/4 cup chopped fresh cilantro
  • 1 avocado (diced)
  • 1/2 cup sour cream
  • 1 lime (cut into wedges)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Spread the tortilla chips in an even layer on a large baking sheet.
  3. Dollop the cottage cheese evenly over the chips. Next, sprinkle the shredded cheddar on top.
  4. Bake in the oven for about 8-10 minutes until the cheese is melted and bubbly.
  5. Remove the nachos from the oven and immediately top them with diced tomatoes, olives, red onion, jalapeño, and black beans.
  6. Garnish with fresh cilantro and diced avocado.
  7. Drizzle with sour cream and serve with lime wedges on the side.
  8. Enjoy these nachos immediately while they are warm and crispy!

Notes

These nachos are best enjoyed fresh from the oven. For an extra kick, consider using pepper jack cheese. Feel free to customize toppings based on preference.
