  • 1 cup cottage cheese Can be substituted with dairy-free alternative.
  • 1/2 cup diced jalapenos (fresh or pickled) Roasting jalapenos adds more flavor.
  • 1/4 cup chopped green onions
  • 1/4 cup shredded cheddar cheese Can experiment with other cheeses.
  • 1 tablespoon mayonnaise Add more for extra creaminess.
  • Salt and pepper to taste

Preparation
  1. In a large bowl, combine the shredded chicken, cottage cheese, diced jalapenos, green onions, and cheddar cheese.
  2. Add mayonnaise and mix until everything is well coated.
  3. Season with salt and pepper to taste.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Add more cottage cheese or mayonnaise if the salad thickens after sitting in the fridge.
