Method
 

Preparation
  1. Preheat your oven to 400°F and lightly grease a medium baking dish.
  2. Heat olive oil in a skillet over medium heat. Sauté the minced garlic for about 1 minute, then add the halved cherry tomatoes and fresh spinach. Cook until the spinach wilts down.
  3. Stir in the heavy cream, softened cream cheese, Parmesan cheese, Italian seasoning, paprika, and red pepper flakes if you’re using them. Let it simmer for 3-4 minutes until the sauce thickens slightly.
  4. Arrange the shrimp in a single layer in the prepared baking dish. Season them with salt and pepper to taste.
  5. Pour the creamy sauce evenly over the shrimp and gently toss to coat each piece.
  6. Sprinkle the shredded mozzarella cheese over the top of the dish.
Baking
  1. Bake uncovered for 12-15 minutes, until the shrimp turn pink, and the cheese is bubbly and lightly golden.
