Preparation
- Preheat your oven to 400°F and lightly grease a medium baking dish.
- Heat olive oil in a skillet over medium heat. Sauté the minced garlic for about 1 minute, then add the halved cherry tomatoes and fresh spinach. Cook until the spinach wilts down.
- Stir in the heavy cream, softened cream cheese, Parmesan cheese, Italian seasoning, paprika, and red pepper flakes if you’re using them. Let it simmer for 3-4 minutes until the sauce thickens slightly.
- Arrange the shrimp in a single layer in the prepared baking dish. Season them with salt and pepper to taste.
- Pour the creamy sauce evenly over the shrimp and gently toss to coat each piece.
- Sprinkle the shredded mozzarella cheese over the top of the dish.
Baking
- Bake uncovered for 12-15 minutes, until the shrimp turn pink, and the cheese is bubbly and lightly golden.
Serving
- Garnish with fresh parsley and serve hot.
Notes
This dish shines when served warm and straight from the oven. Pair it with a light salad or steamed vegetables for a balanced meal. For extra flavor, consider serving with a slice of lemon on the side. Leftovers can be stored in an airtight container in the refrigerator and stay fresh for up to 3 days. Reheat in the oven or microwave, being cautious not to overcook the shrimp.
