  • 1 lb Raw Large Shrimp (peeled and deveined)
  • 1 tbsp Olive Oil (for sautéing)
  • 2 cloves Garlic (minced)
  • 1 cup Cherry Tomatoes (halved)
  • 2 cups Fresh Baby Spinach
  • 1 tsp Dried Italian Seasoning
  • 0.5 tsp Paprika
  • Red Pepper Flakes (optional) to taste
  • Salt to taste
  • Black Pepper to taste
  • 1 cup Heavy Cream
  • 4 oz Cream Cheese (full-fat preferred)
  • 0.5 cup Grated Parmesan Cheese
  • 1 cup Shredded Mozzarella Cheese (for topping)
  • Fresh Parsley (chopped) to taste

Method
 

Cooking Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet, cooking until they turn pink, about 3-4 minutes. Season with salt, black pepper, paprika, and red pepper flakes (if using).
  4. Stir in the cherry tomatoes and cook for another 2-3 minutes until they soften.
  5. Add the fresh spinach and Italian seasoning, cooking until the spinach wilts.
  6. Lower the heat and pour in the heavy cream and cream cheese, stirring until combined and creamy.
  7. Mix in the grated Parmesan cheese. Allow it to simmer for a few minutes.
  8. Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
  9. Broil in the oven for about 3-5 minutes until the cheese bubbles and turns golden.
  10. Garnish with fresh parsley before serving.

Notes

This dish is wonderful on its own, but you can pair it with a fresh salad or steamed vegetables for a complete meal. Adjust the spices according to your taste preference.
