- Heat the olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet, cooking until they turn pink, about 3-4 minutes. Season with salt, black pepper, paprika, and red pepper flakes (if using).
- Stir in the cherry tomatoes and cook for another 2-3 minutes until they soften.
- Add the fresh spinach and Italian seasoning, cooking until the spinach wilts.
- Lower the heat and pour in the heavy cream and cream cheese, stirring until combined and creamy.
- Mix in the grated Parmesan cheese. Allow it to simmer for a few minutes.
- Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
- Broil in the oven for about 3-5 minutes until the cheese bubbles and turns golden.
- Garnish with fresh parsley before serving.
